It's pouring rain and I wanted to make something warm & hearty today.  I just started grabbing whatever was in the fridge.  I made up a yuuuumy recipe and wanted to share it with you.   It is sooo delish!!!  Seriously only took about 10 
mins to prepare! 

I call it the:

"Turkey Enchilada Mish Mash"

1 package lean ground turkey
About 8 oz frozen sweet corn (you can use fresh if you like)
1 can rotel tomatoes
Pepper Jack Cheese (I use a soy version)
Corn tortillas
Enchilada Sauce
Cream Corn & Pepper Soup  (those kind at whole foods in the carton/box)
Diced White Onion
Chopped Green Onion
Salt/Pepper
Chili Powder


Brown turkey meat with some onion, salt, pepper & chili powder.  In a casserole pan, begin layering all the ingredients in no particular order:-)
I started with a layer of tortillas then drizzled the corn soup then started adding a layer of meat, then cheese, white onion, rotel tom's, drizzle
enchilada sauce then another layer of tortillas and so on.  Make sure you put extra cheese on top and the green onions.

Bake at 350 for about 30 mins.


Serve with a small side salad and you have a perfect meal!  Enjoy! 

 
 
Often, I am asked what my health and fitness "program" consists of and I want to share a few quick tips for getting over that sluggish winter feeling and shed that "fluff",  as I call it.   Here are 10 simple adjustments you can make...

The primary thing is to rev up your metabolism!  It is natural that we eat more carbs and exercise less in the winter.   So as the temp outside is warming up and the sun is shining a bit more...this is the perfect time to readjust our metabolism.

1.  Drink a glass of water right when you wake up. (Before you drink your cup of joe)  
After a nights sleep, we have toxins just sitting in our body.  This flushes them out and prepares your body for the day.

2. DO NOT SKIP B-FAST!  Have a whey protein shake with the following ingredients.  
Getting protein right into your system first thing fills you up and gives you lasting energy!  

-8 oz of water 
-Protein Powder
-1/2 banana
-small handfull of almonds
-Sprinkle of flax seeds
-Super red powder (pom, acai, blueberry, etc..) OR
-Super green powder (greens, green tea, etc..)
-Big dash of cayenne pepper
-A few frozen strawberries instead of ice

As an alternate, I like to eat Greek Yogurt!  It has TWICE the amount of protein!


3. DRINK MORE WATER!   It seriously speeds up your metabolism.  Our mind and the rest of our organs as well as our cells- function better!  Live, alkaline water or at least water that has minerals added is the best!   Dont just drink random purified bottled water.  

4. Eat small meals every 3 hrs.  I call it "grazing".    Never skip meals...your body shuts down and actually holds on to the fat.

5. TAKE EFA's (essential fatty acids...omegas, flax, borgage) 

6.  CUT OUT SUGAR!  Start cutting out sugar, wheat, gluten, wine and dairy.  I know that sounds harsh but you will see a huge difference in your energy!


7. GET MOVING!  I like to just throw on my tennis shoes and take a powerwalk!  This not only rev's up your metabolism, but it is the best thing for your joints.  

8. EAT FRUIT BY ITSELF!  The acids in our stomach work best when you do not mix foods so to rev up your metabolism, eat fruit alone and in the morning.  

9. DON'T CUT OUT CARBS!  We have all been practicing this anti-carb diet, but we actually need it for energy.  If you notice you get that 3:00 pm slump...you probably need to add a good carb at lunch. Try quinoa or brown rice.

10. STOP DRINKING DIET SODAS!  Even though they are calorie-free, the aspartame is  AWEFUL for your mind and body!  Do you notice you feel bloated and hungrier when you drink them?  PLEASE STOP!!!

Today, women are waiting until later in life to have children!  I'M INCLUDED!  I always felt that I had so many issues to deal with before I was healthy enough Spiritually to be a good mother.  I always said, "I don't want to be a screwed up mom raising screwed up kids".  There was also the issue of my career being top priority.  With waiting until later to start trying, we have to deal with our bodies not cooperating as easily as women in their 20's.  It is vital that we prepare our bodies to conceive!   This is a very personal matter, but I decided to share my journey because I know there are so many women out there embarking on the same miraculous mission.  I want you to know you have options!

Wow, how time flies, right?!  We are in the final week of 2010 and the year flew by so fast my head is spinning.  I really LOVE this time of year!   In LA, the industry is pretty quiet...there's not many auditions or work going on so it always gives me the opportunity to get organized, brainstorm and plan my new goals.   It's a time of excitement and anticipation for what the new year will bring and it's also a time of peaceful reflection over what has happened over the past year.  


Here are a few of my 2010 highlights and a few tid-bits that I learned along the way:

EXPIRATION DATES!
The biggest highlight of my year was finally getting to see Africa.  I have wanted to travel to this magical & mysterious place since I was probably about 8 years old.  My grandpa passed down his National Geographic subscription to me and my nose was always in them..that is, until junior high when I bought my first Elle magazine! Haa!  The most surprising thing I learned in Africa is that the children in the orphanages are happy & healthy. They get 3 meals a day, school, church and have all these new brothers and sisters to look after them.  I know not every orphanage is like the one I visited, but seeing this really changed my perspective.  It was so beautiful to see kids running around barefoot playing games and hop scotch and not on a computer or playing video games. They are connected to one another, connected to the earth & so much more spiritual than American kids.   What a dream come true for me.  I'm anxious to get back there!   What made it even more spectacular was experiencing this with my husband.  He recorded the kids in the orphanage singing on one of his songs.  For more, go to www.aaronhendra.com

SEEING OTHERS DREAMS COME TRUE!
What's more fun than seeing your own dreams come true?  Seeing one of your best friend's dreams come true!  My dear friend Heidi's dream of becoming a mama came true this year in a big way...she had not one beautiful healthy baby, but THREE!   She is such an inspiration!  She's having a blast and by this photo..you can see she looks fabulous too!   Motherhood 
suits her very well!






TRUST IN GOD'S PLAN (NO MATTER WHAT) & NEVER GIVE UP!
Sometimes we push, push, push and drive ourselves nuts before we realize we have to lay our dream at God's feet and allow Him to straighten things out.  That was a VERY challenging thing for me!  After I got married, my career went through a "dry spell" and was virtually non-existent.  For a gal who had always validated herself through her work & career, this was excruciating!  BUT, once you "surrender" and you are willing to give it up for God...He'll blow your mind and turn it into something better than you could have planned.  Of all the cool things I've done in my career, I have to say...what tops it all was getting to the final 20 contestants for Oprah's "Your Own Show" and pitching my show idea directly to Mark Burnett this July!  Even though I didn't go forward to the reality show competition, it was like a little kiss on the forehead from God letting me know that I was on the right path and to NOT GIVE UP!  I am so excited to see what's in store for 2011.




Just a few more tid-bits I learned:


1. Texting 24/7 makes you look like an idiot!  
People who sit at dinner with their friends and text is just retarded.  Watching our generation walking around like zombies and texting constantly is just disturbing to me!   A few months ago, I even started turning my phone on silent on the weekends just so I don't have to hear that annoying "bleep, bleep" alerting me of a text.  I will check my phone when I feel like it and enjoy my weekend with my husband, thank you very much!   The phones sitting on the table during lunch or dinner is so rude too!  It's like people are validated by how many texts they are receiving and want everyone else to hear their "bleep, bleep".  Get over yourselves!  PLEASE!  What is so important that you can't turn your phone off for an hour or two and give your friend at dinner your undivided attention.  To all my friends that are actually respectful and do that...I APPLAUD YOU!   Oh and one more thing, to all of you dear friends who sent me a personal Thanksgiving or Christmas text this year, THANK YOU- THANK YOU- THANK YOU!  The group texts are so impersonal.  I'm not a fan!

2. Charisma cannot replace good old fashioned Character!
In LA, the city where everyone is trying to get noticed, character is often pushed aside and charm & charisma takes center stage.   "Charisma may get you noticed and even promoted, but it's your character that will keep you there", says Joyce Meyer.   I admit, I have gotten totally blinded and taken with people who have that magnetic wit and charm, but this year I have FINALLY learned to look past it all and get beneath the surface to see what people are really made of before I make up my mind about them.   What a great learning lesson...sure wish I could have learned that about 10 years ago.  Could have saved me lots of drama and heartache.  
But, hey- better late than never, right! 


3. Seven year itch?  Whatever!
Feb 11, 2011 will be our 7th year wedding anniversary and it's the best yet!   The first few years of marriage were spent getting to know how each other ticks, what buttons to push (or not) and just getting our footing with the whole thing.  For me, years 3-5 were a bit more fun, but you're both still working on your communication HARDCORE!  I have several friends who actually never made it to year 3 or 4 and ended in divorce.  So, now going into the 7th year...its like we're the tightest teammates, we're having a blast and enjoy all the different aspects of a happy marriage.  I wish this joy for everyone!!!  Today Dec 27th is both my parents AND my husband's parents wedding anniversaries!  Happy Anniversary Rocki & Glen Bolton and Ruth & Les Hendra!!  Love you all so much!


MAY YOUR 2011 BE RICHLY BLESSED AND MAY MANY MORE DREAMS COME TRUE FOR YOU AND YOUR FRIENDS & FAMILY!

At a point in my life when I was struggling to understand myself and feel comfortable in my own skin, I was introduced to this funny, powerful, tell-it-like-it-is woman preacher, Joyce Meyer.  I had only been married about 6 months and was struggling to find myself and my role as a wife after being "Miss Independent" for so long.  Thank God for Joyce!  I began watching her every morning with my cup of coffee in hand and notepad by my side.  I soaked up everything she said like a sponge.  Little did I know this long journey I was embarking on.  As painful as it has been at times, I would do it all over again...knowing what's on the other side!

Being raise in the South and having the the stereotypical "wifely attributes" instilled in me combined with being overly ambitious AND abnormally independent, just did NOT mix well for me.   Could I have my career and be a great wife at the same time?  How on earth could I have all that and be a great mom too?  Would I have to give up my career that I was so passionate about?  How was I going to manage all this?

With the Grace of God, that's how!  BUT, it took me a while to get that through my thick head:-)

 

I was confused! 

I was frustrated! 

I was pissed off most of the time! 

I was making myself physically ill over it!

Here I had met the world's most amazing man, who I really did not think existed, and he loved me!   YES ME...high-maintenance, complex, hard to handle,  overly independent,  daddy issues galore, sassy with a bad case of PMS.   ((SIGH))  Poor Aaron!   We all grow up hoping to find our Knight in Shining Armor.  I found him yet I was completely miserable! 

Ok, by now,  it's apparent that I'm somewhat of a control freak!   Yes, I admit it!   I'm a Leo.  I just can't help myself.  I'm working on it!  But, marriage was an area that I just could not seem to control and wrap my head around.   Therefore, I was completely and utterly miserable.  The beautiful thing about Joyce is she is the most honest and transparent woman I have ever seen!  She, too, had a difficult time with the role of  wife and her stories have made me feel I wasn't alone.  My husband was the most low-maintenance, loving, patient human being on the planet so when I FINALLY realized I had to get out of my own way and allow God to work on me...whewww...surrender  is an amazing thing!  Almost seven years later and a marriage stronger than ever (I don't know what they're talking about with the "seven year itch") , as Joyce would say, "I may not be where I want to be, but thank God I'm not where I use to be!"

Joyce's teachings, her TV Show and her books will inspire just about anyone!  Man, woman, any age, any background, any race.  I encourage you  to check her out and I'm positive her candor and stories will entertain and inspire you too.

Unless you have been living under a rock, you have been hearing about HUMAN TRAFFICKING!  I cannot get up everyday knowing this is happening and not help to end it!  Sometimes these issues seem so big and overwhelming that we think how could I possibly make a difference...well, together WE CAN!

The average age of entry into the sex slave industry is 12-14...

What were you doing when you were 13?   I was a cheerleader and my main concern on a daily basis was what Op t-shirt I was going to wear with my Jordache jeans and hanging out with my friends at the mall or skating rink.  Can you fathom being drugged and forced to "service" 30-40 men a day when you were only 13?  


Earlier this year, Joyce Meyer did a story on this subject and how her ministry was joining with the Dream Center LA to renovate an old building in downtown LA to house and rehabilitate young women who are rescued from the sex slave industry.  The facts and statistics floored me and I knew I had to find out more.  I mean I only  live 30 minutes from downtown LA!  I was connected with them via a former intern and my business partner and I took a tour of the facility last week. The stories were heartwrenching and we were in tears through the entire tour. WOW, THE PEOPLE AT THE DREAM CENTER ARE LIKE ANGELS ON EARTH!  

I have to share one story in particular with you.  This proved to me that this is not just an overseas issue...IT IS HAPPENING IN OUR OWN BACKYARD!   A 13 year old girl was trained to be a "recruiter" and enrolled in a normal LA school.  She became friends with a girl who I assume was a good "candidate".  The recruiter girl invited the girl for a sleep over and everything seemed normal.  They were watching TV and just hanging out.  The recruiter girl went to the kitchen to get them something to drink and slipped a drug into the other girls drink.  She passed out and woke up to a man raping her.  They gave her more drugs!  When she eventually came to, she was filthy, hungry and exhausted.  She had no idea how long she had been there or how many men had raped her.  She was sold to a man in Texas- MY HOME STATE- for $200,000 and was kept drugged up in a basement and forced to have sex with up to 40 men a day!  THIS INFURIATES ME!  Who are these men?  The buyers and the sellers. The devil's spawn!  They are the men in front of us in the grocery line, sitting at the table next to us in a restaurant or YOUR NEIGHBOR!  They must be stopped.  I want to hang them up with stakes by their "you know what's"...Ok, I know that's not the Christian thing to say, but THEY MUST BE STOPPED SOMEHOW, SOMEWAY!

This story has a happy ending, but unfortunately most of them do not!  The statistics are beyond horrible.  Only 1%, yes, 1% of these girls are ever found and rescued.  But, this girl in Texas was!  By the Grace of God, her brother- a truck driver- was on a trip from Cali to Tx and stopped at a convenience store.  He looked down into the backseat of a car and saw a high, drugged out girl...YES, IT WAS HIS SISTER!  He got away with her, but the perpetrator was never found.

We can help these girls!  It is very expensive to rehabilitate them because of all the medical care they need and the length of the rehabilitation process.  First they are weened off the drugs and many need false teeth because their teeth have rotted out from the drug use.  They are taken care of physically then the long road of emotional recovery begins.  The average length of rehabilitation is 7 years.  So, by the time they are around 20, they are ready to go back into society and start their lives.  This brings me to tears just writing this. WE HAVE TO DO SOMETHING TO PREVENT THIS FROM HAPPENING!

Hi Everyone!
 
First, thank you for your prayers and thoughts.  I needed them and they helped me get through the trip.  The people of Ayaviri needed them as well. :)
 
Peru was an experience!!!  I knew about poverty, but... 
I really didn't!  When all of my senses were exposed to it...I can say that's when I finally understood the true meaning of poverty. Honestly, I was traumatized.  It's been a few days since my return and I've been sleeping a ton.  I'm feeling better and can look at the trip in a different light.  I needed to experience something like this.  I needed to experience what it was like to truly give and serve those in desperate need.
 
I left on the 17th and arrived in Cuzco, Peru on the 18th.  We stayed there a few days to adjust to the high altitude change (11,000ft).  We took a tour of the city and also a day trip to Machu Picchu.  Both were filled with beauty, culture and history. AMAZING!  We then took a 4 hour bus ride to Ayaviri (14,000ft),  where we spent a solid 3.5 days of servicing medical needs.  On the 3rd day our team was split in half and some were sent to Macusani to serve, (a town 2,000 ft higher).  Our hotel situation wasn't bad...it could have been worse.  We had no running water at times.  We were lucky if any of it was hot, and when we did have running water, it was brown.  The beds were not clean and we didn't dare walk around barefoot.  BUT...the doors were locked, it was safe for us to sleep and we had warm blankets.  The food is a different story.  When I was told everything would be catered, I had a different envision then what was severed every day.  Those familiar with the reality of mission trips were smart and brought instant oatmeal, peanut butter and crackers, instant soup and a ton of health bars.  My mom and I lived off of stale bread and jam for the last 3 days of the trip.  It was an experience, and my mom and other roommate ended up with Montezuma's revenge.  Poor things! UGH!  On our way to Juliaca (return flight connecting back to Lima and then Miami) we stopped in Puno to experience the highest navigable lake in the world...Lake Titicaca.  It was beautiful and we were able to tour the floating villages.  It was amazing to witness people living on floating roots...  

  
The images of the babies and young kids dressed in dirty clothes are still very vivid.  I see their fingernails that are filled with dirt.  By the 3rd day of service my body was rejecting the smell.  It was hard...  The people were so kind and thankful.  They had amazing spirits and tried their best to make us feel welcome and appreciated.  We witnessed a variety of medical cases.  Sadly, there were a ton of domestic abuse cases.  I could see the women watching every woman on the team...we inspired them.  They witness the guys love on us and everyone share compassion with each other...we worked as an amazing team!  The people of Ayaviri needed to see that this way of life exists!  The women needed that inspiration and hope.  Especially the younger generation.  The culture was a mixture of old and new.  There were a ton of people still dressed in the old fashion wardrobe and others in jeans and s
weaters...  Everyone walked and carried everything on their backs....all day....every day...
 
We serviced around 1,400 people.  I honestly don't know how we did it, but we did.  Our medical team consisted of 6 General Medicine Docs, 3 OBGYN's, 1 Specialist in high risk pregnancies, 1 Derm, 1 Dental, 1 ENT, 4 Peds Docs, 3 Daycare individuals, 2 pharmacist, 1 man who specialized in EKG's.  There were several more of us who were apart of the administration process, the triage process, and the moving process (movers led the people to their specialized doctor(s)).  A local team joined us as well and increased our numbers.  I couldn't be prouder of the group I was apart of!  The American team consisted of individuals from South Dakota, California, Colorado, Miami and Wyoming.  Most of us didn't know each other, but we were a family when we landed in Peru!
 
My advice to anyone thinking of doing anything like this...learn Spanish (or the speaking language of the country).  I walked into this mission knowing nothing.  I'm so disappointed in myself and realized on day 
one how important it is to know how to communicate.  I had a translator, but it's not the same.  I plan on enrolling in a private class in NY to step up my game.  Even though this experience was hard and traumatizing...I WILL DO THIS AGAIN!  There were doctors on the team who participate in two medical missions a year all over the world!  I would like to do one a year.  I can now say...I know and understand!  My eyes are wide open....

Do you have a dream that seems impossible to attain?

Does it feel like its way out in the distance?

Do you find yourself talking about it all the time, 
but not taking action?

The good news is...YOU HAVE A DREAM!  
That's the scariest part...not having one! 
Can you imagine not having a dream and getting up every single 
day without something to look forward to?  

If you feel stuck today and the routine of life has kept you from 
making strides toward your dream...JUST START!  Take baby steps.  
Do something...ANYTHING, every single day that has something to do 
with your dream.  It could be as simple as writing down a goal or making 
that phone call you've been putting off.  JUST DO SOMETHING!  Then before you know it...your dream is coming into focus and it will be 
within your grasp!  

I also recommend journaling about your dream!  
Get the ideas our of your head and down on paper.  

Create a dream vision board!

Set 30 day, 3 month, 6 month goals pertaining to your dream.

Get the mindset that you have already attained the dream!  Its here, now and  you are living it!  For example, if you have a dream of being a mother...see  yourself pregnant, holding that baby and teaching that toddler to walk.  If you have a dream of seeing all the museums in Paris, envision yourself on the plane, sipping coffee at a cafe on the Champs Elysess and walking around the  museums looking at the beautiful artwork.

1. As a model, your appearance & image is top priority. What are your (3) "must's" for always looking & feeling your best?

8 hours of sleep,  healthy food, my skin care regimen.

2. Please share a few of your personal tips for healthy eating.

I love to load up on oranges, lemons, limes, grapefruit and melons...they melt fat!

Green tea has totally sped up my metabolism!
Lettuce and radishes also dissolve fat! Luckily, I love salads!
Adding cinnamon to my morning cup of coffee levels out sugar metabolism!


2. Your career requires you to travel constantly-how do you stick to a workout regimen when your schedule is always changing? 

I love to walk and I can walk anywhere... As long as I feel the area is safe, I go walking. I can stretch in my hotel room and perform limited pilates.

3.  With all the negativity that models & celebrities receive in the media, they obviously lack the ability to stay grounded.  How do you stay grounded in the challenges of the fashion world? 

My family and close friends have been wonderful in keeping me grounded! I always check in with them, or vent when needed. I also keep a spiritual journal. I write in prayer form and try to stay as close to God as I can. I also try to avoid the spot light on my personal time.

4. What are your go-to items that always make you feel glamorous?

 A sexy black dress always makes me feel glamorous and sexy. I love earrings... AND I love a nude lip!

5. You were raised in Casper, Wy- how do you unwind when you visit home?

I love to spend time at a lake near by, Alcova Lake. I also head up to the mountains and enjoy the waterfall! My little sister and nephew always find ways to put things into perspective.  AND, I am a woman who still goes home and cuddles with her mommie! 

6. What's next for you?

I'm headed to Peru to participate in a medical mission. One of my goals this year was to reach out and give back! This was a perfect opportunity and I'm very excited! We will be providing wellness care to a small town 12,800ft in the upper east Andes. On one of the days there our medical staff will also be delivering twins via c-section. We have gathered clothes, children's vitamins, and purchased tons of medicines and equipment for this mission. Our main goal is to share and show as much love as possible!!
